Soak the soy granules in hot water for 10 minutes, after that drain the water. Clean the garlic and smash it. Clean the onions and chop them very fine. I use a mini blender for this. Put the minced meat into a big bowl and mix it with all the other ingredients.
Spread olive oil over an oven proof dish according to the size of the meat loaf you want to prepare (5 inches by 8 inches or 12 centimeters by 20 centimeters for meat loaf of half the amount given in the recipe or 13 x 9 inch big or 32 x 22 centimeters for one big meat loaf). Form a loaf and place it in the oiled dish. Spread some olive oil over the top. Bake in the oven for 1 hour at 200 degrees. If you want to freeze a meat loaf, wrap it in cling film and put it in a freezer bag or a container.
• Boil eggs (3 or 4 for a big meat loaf according to the size of the baking dish) and peel them. Place them in the middle of the meat loaf and cover them with your minced meat. Make sure you press well around the eggs. This gives a very nice optical effect when cutting the meat loaf into slices.
• Mix the minced meat with plenty of oregano and 1 cup of sliced olives. You can use black or green olives according to your taste.
• Put half of the minced meat in your baking dish. Spread Pesto sauce over the meat and cover with the remaining minced meat. You can use the coriander pesto for this variation as well.
