Ingredients (for 30 brownies):

  • 500 grams dark chocolate
  • 280 gram butter
  • 5 eggs
  • 2 cups sugar
  • 2 cups flour
  • 1 tablespoon vanilla essence
  • 3 tablespoons coffee
  • one quarter of a cup cacao powder
  • 2 teaspoons baking powder
  • 2 packets (200 gram) walnuts
  • butter to grease the baking form (35 by 25 centimeters)


You need a baking form 20 centimeters by 30 centimeters. Cover the bottom and the sides with plenty of butter.

Start with melting the chocolate: The only thing to remember when melting chocolate is to absolutely use a double boiler. You cannot melt chocolate by putting it over direct flame as it will ruin the chocolate. Making a double boiler system is very simple. You just need two pots, one fitting into the other. Place 250 grams of chocolate together with 200 grams of butter into the smaller put. Fill some water into the bigger pot, place the smaller into the bigger pot and put your double boiler on the heat. When the water is boiling – which you can hear from the bubbling sound – switch the flame off and wait until everything is melted. If necessary you can switch the flame on again after a couple of minutes. Just be aware that overheating ruins your chocolate!

Once the chocolate and the butter have melted, add the coffee and stir the mixture well together. Now chop the walnuts roughly with a big knife on a chopping board. Crack the eggs into a mixing bowl, add the sugar and the vanilla essence and beat with a hand mixer until you have obtained a thick cream. Blend the baking powder with the flour, sieve the flour over the egg mixture and blend everything. Now fold in the chocolate mixture and finally the walnuts. Fill the dough into your baking form and put it immediately into the oven which should be preheated 5 minutes. Bake at lowest temperature for 20 minutes, until the mixture has just set. Top it off with 5 minutes of heat from the grill. If you have an electric oven, 20 minutes should be sufficient as the heat is distributed a lot more evenly as in a gas oven.

Take the brownies from the oven and let them cool down in the pan. Turn the brownies on to a wire rack. For the icing melt the remaining 250 grams of chocolate in your double boiler with 80 grams of butter. Mix the melted chocolate well and spread it over your brownies. Let the chocolate icing settle before you cut the brownies into pieces.
