Coconut banana pie

Ingredients (for a pie form with 30 centimeters diameter):

  • 3 cups flour
  • 150 gram butter
  • 3 cups sugar
  • 3 eggs
  • 1 teaspoon cinnamon
  • 8 bananas
  • 1 lemon
  • 1 packet (0.2 liters) coconut milk
  • 1 packet (0.2 liters) cream
  • 1 tea spoon vanilla essence
  • 10 gram china grass
  • half a glass of water
  • butter to grease the pie form
  • 50 gram desiccated coconut


Melt the butter over low heat. Pour the flour into a mixing bowl and add the cinnamon, the eggs and one cup of sugar. Start combining everything, pour in the butter and knead everything until you have obtained smooth dough. Wrap it into cling film and let it rest in the fridge for some minutes.

Grease the pie form well with some butter. Roll out the dough on a flat surface dusted with flour until it is big enough to cover the pie form and the sides of the pie form. If it is easier for you just roll out a circle to cover the bottom of the pie form. Then you can roll long stripes of dough to cover the sides of the form. Prick the bottom of your crust a couple of times with a fork to prevent it from rising in the oven. Bake in the oven for 30 minutes at lowest temperature.

While the crust is baking, peel your bananas and squeeze the juice from the lemon over them. Smash the bananas with a blender stick. Incorporate one cup of sugar and the vanilla essence into the smashed bananas. Cut the china grass into pieces and put them into a small pot. Add the water, the coconut milk and one cup of sugar and bring everything to a boil, stirring occasionally. Beat the cream with a hand mixer until it is stiff. Once the coconut milk mix has boiled, let it cool down for a bit and blend it with the smashed bananas. Fold under the whipped cream. Pour the banana cream into the pie crust. Put the pie into the fridge until the cream has set, then sprinkle the top with the desiccated coconut.
