The aubergine or eggplant is known as an excellent source of potassium. This mineral helps regulating salt levels and thus is responsible for good hydration of our tissues and body cells. Aubergines contain a lot of other vitamins and minerals as well, like vitamin B6, folate, magnesium and niacin as well as copper, manganese and thiamine (vitamin B1). Aubergines also have the potent antioxidant nasunin which blocks the formation of free radicals.
Like the tomato, a member of the same family, the aubergine was once believed to be poisonous. Nowadays dark egg plants are coming into fashion as super foods, as the dark color signals abundant phytochemcials, the healthy ingredients of plants which help our bodies get rid of poisonous substances.
