For meat-lovers there are few things which smell as appetizing as frying bacon. I even had vegetarian guests taking a break from their routine when I make a pasta carbonara. But there is a big BUT: bacon is not what you can call healthy food. When making bacon, meat from the belly of the pig is cured with nitrites, which give bacon its reddish color. During frying, nitrites are transformed into cancer-causing nitrosamines. I believe, when you enjoy a wholesome diet with plenty of fruits and vegetables, your body can take some bacon once in a while. I don’t think a daily breakfast of eggs and bacon is really easy to digest. So, enjoy your bacon, just make sure it really is a special treat.
