Salad with vinaigrette

Ingredients (for around 4 servings):

  • Any leafy kind of salad you find fresh in the market
  • 2 tomatoes
  • 1 red or 1 yellow bell pepper
  • half a bundle of basil
  • 2 cloves of garlic
  • 2 tablespoons of red wine vinegar
  • 6 tablespoons of olive oil
  • salt
  • freshly grated pepper
     

Method:

Clean the salad well. Throw away any discolored pieces. Wash the tomatoes and the bell peppers. Soak all the vegetables for 10 minutes in drinking water which has been mixed with 2 table spoons of salt. Salt water helps to remove all parasites from vegetables. Drain the vegetables and rinse them with purified water to remove the salt. For the vinaigrette, clean the garlic and chop it or smash it with a garlic press. Mix the garlic with half a tea spoon of salt and vinegar in a little bowl. Add as much pepper as you like. You can let the garlic marinate with the vinegar for a little while, this helps to bring out the full flavor of the garlic. Mix everything well and make sure that the salt has dissolved in the vinegar.

Arrange your vegetables in a salad bowl. Now incorporate the oil one table spoon at a time into the vinegar mix by stirring continuously. Proper vinaigrette looks slightly murky and is a thick emulsion of oil and vinegar. As soon as the sauce is ready, pour it over the salad and blend all the ingredients well. Serve immediately.
